Before answering those questions, we first have to understand the difference between a convection and a conventional oven.

Convection Oven

Convection ovens have more heat sources than conventional ovens and also feature a fan to help circulate heat while your food cooks. Because the built-in fan moves hot air around, this oven has the ability to cook/bake faster than your typical conventional oven. While this can be an amazing feature, it also has its drawbacks.

The constant circulation of hot air can cause the outside of your baked goods to brown quickly and cook faster than the center of your cakes or pastries. In other words, this can result in the outside of your cake appearing golden and ready while the middle is not yet fully cooked (yikes).

Although the rapid cooking and baking time is a huge bonus (who doesn’t love saving time?), it may not be the best option when it comes to baking larger or more delicate dishes. However, it’s perfect for smaller baked goods such as cookies and different types of bread.

Conventional Oven

Conventional ovens, like convection ovens, use heat sources to bake and cook; however, they do not have a fan circulating hot air. Instead, they use stationary heat sources that normally send heat from the bottom of the appliance to the top in order to cook everything through.

This type of method takes a lot longer than its convection counterpart, but it ensures even baking and browning. This oven is typically ideal for larger or delicate baked goods such as meringues or macarons.

However, conventional ovens have their disadvantages as well, and if you decide to use the bottom and top racks at the same time, you may have some issues. It’s common for your bottom rack dish to still be undercooked while your top rack dish is already overcooked or burning.

So Which Type Of Oven Is Better For Baking?
